November 25, 2008Red Chicken Curry
1 pound chicken 2 cans coconut milk 1/8 cup red curry paste 1 1/2 cups broccoli 2 tablespoons fish sauce 1 tablespoon palm sugar or brown sugar 1/2 teaspoon salt juice and zest of one lime 1 large red pepper Cut meat into large bite-sized pieces; set aside. In a medium saucepan, warm the coconut milk over medium heat until it boils gently. Adjust the heat to maintain a gentle boil and cook for 6-8 minutes, stirring occasionally. The coconut cream will become fragrant as it thickens. Add the curry paste and stir to dissolve it into the coconut cream. Continue cooking for 1-2 minutes. In a large skillet, add the chicken and a couple of tablespoons of coconut mixture. Cook for a couple minutes to coat the chicken. Increase heat and add the coconnut milk, broccoli, fish sauce, sugar, salt; stir well. Stir in lime, peppers, half cup basil leaves and reduce heat to maintain a gentle boil and cook for 8 to 10 minutes, stirring occasionally. When the chicken is done and vegetables tender, remove from heat. Serve with remaining basil leaves and lime zest. Serve with steamed rice or Thai noodles.Happy Day, Goobie!
November 22, 2008Yesterday, my friend, Brooke and I made headbands for our little girls. It was great, fast and super easy. Pictured above is my creation. I love it, but I think next time I'm going to make the tule (sp?) flower smaller, so Penelope's not quite as tempted to pull it off her head. Thankfully she was sport enough to not touch it for the photos. I'll be putting a tutorial up soon on how I did it.

You're My Favicon

This particular link was stuck in the limbo that is my firefox browser for about two months. I've been planning on making my favicon, just never had the motivation to mess around with html. Last night, I finally did something about it. I made my favicon. The tutorial is very straight forward and a lot easier than I thought to do. If you're wanting to add your own favicon, I suggest making your icon in photoshop using a transparent background (great for irregular shapes), then after changing your color mode to RGB, save your image as a gif. November 11, 2008The doctor's appointment went really well yesterday, Penelope didn't really fuss at all when she got her shots & she doesn't weigh as much as I thought she did, but my arms are saying that the scale is a filthy liar.
Weight: 19 lbs 1 oz (90th percentile)
Height: 26 3/4 inches (73rd percentile)
Head: 17 3/4 inches (95th percentile)
Milestones:
- Penelope can feed herself a bottle
- She now eats avocados, bananas, pears, apples, pumpkin, carrots, and anything else you put in front of her
- Every time she takes the first bite of something she gives me a surprised/disgusted face, then continues to eat whatever food that may be
- She loves paper, especially ripping up magazines
- She yells at her toys
- Last Sunday she waved at me when I was waving at her
- She says, "ma ma ma ma", but I doubt she knows what it is she's saying
- She shows absolutely ZERO enthusiasm for rolling over, but she knows how
- She's great at sitting up, and now I set her in the cart (strapped in, of course) at the grocery store
- Now that she's becoming more mobile, I've tried to be more conscientious of our apartment and the things in it. Just today she pulled down one of our banners from off the wall. It's probably time they go. [sniffle] If anyone wants some artwork, please let me know. I need to sell them. [sniffle, sniffle]
2008's Resolution Report

OH, and before I forget, here are a couple of gifts that I've made in the last couple of weeks: I made a lunch sack as payment for some hair stuff my sister did for me. [A Little Plug for my sister, Emily, If you live in SLC and you're in the look out for a great cut or in need of an uber talented colorist, go to The Spa Club and ask for Emily.] I made it to match the apron I made her. If you missed out on the tutorial for the lunch sack, you can find it here! With all of my friends having baby boys these days, it's really challenged my creativity (in a good way). Girls are just so much easier to make things for. I got this brilliant idea from my Auntie Annie for a hooded towel. She gave me one for Penelope, and I LOVE, LOVE, LOVE it. It's the perfect kind of gift that goes for both boys and girls (plus it's nice to have something that baby can use for a long time). I'll have a tutorial up soon on how I did it. Here's my Halloween in Poladroids: The weather reporter said that it was going to be a hideous day. WRONG. My younger sister, Linnley, dressed up as Sleeping Beauty (didn't manage to get her with the tiara, oh well). I dressed Penelope up (many thanks to Carrie) as a goldfish. It's fitting since she's named after a song about a fish. And I love Koi fish. We had a little "party" at Grandma & Grandpa Newton's. Almost all of the great-grandkids were there. We made appearances at a couple of offices & a candy counter. We capped off our perfect day with a bunch of cute trick-or-treaters.
